Seventh chords are movement chords. This means that when you hear a G7, your ear will tell you that this chord wants to go somewhere. You don't feel a sense of rest like a plain G chord, G7 has a pulling effect that you ear wants to hear resolved. Although this resolution does not always and should not always happen, G7 wants to go to a C chord (or Cm). Practice playing a G7 and then a C and you will hear a very familiar sound.
